		<description>Stick with the diet, all the inflammation only gets less as you keep away.
Try TJ's for lots of foods.  Some of thier products have the warning about being made on shared equipment but I haven't had even one gluten reaction since I went gluten free.  And believe me if there was gluten, I would know.

		<description>Do be cautious about how much of the classic GF flour blend that you consume, i.e. white rice flour/potato/tapioca.  My triglyceride levels elevated after going GF.  My doctor had me switch to other GF options which means I bake a lot, but my triglyceride levels have stayed with in the normal range.

Nightshade fruits/tubers (potatoes, tomatoes, eggplant, peppers, spices made from peppers) can cause aches and pains in some people.  For some it can make their arthritis symptoms worse.  Many GF foods have potato flour/starch in them.

If you have a challenge with corn make sure you are cautious about xanthan gum. It is a common additive in ready made GF foods.  It is used as a replacement for gluten.  The production of xanthan gum can involve corn...you would need to check with the manufacturer to make sure their xanthan gum doesn't have any corn in it.

		<description>Hang in there!  I am a Fibrobabe who is has gone GF and back again, and GF and back again........  I can definitely tell a difference however it is much more noticeable with Whole Wheat items than white bread.  When I was GF in addition to not eating corn, potatoes, dairy, tomato, I was doing REALLY well.  Try Quinoa instead of rice as it has all the essential enzymes in addition to protein and will assist you in avoiding gaining weight from an abundance of rice.
